‘Processing’ heeft grote impact op je gezondheid De voedingsindustrie schermt met reclame en gezondheidsclaims, en deze overspoelen de winkels, vooral grootwarenhuizen. Diverse vormen van ‘nutriscores’ werden ingevoerd om de consument tot kopen te overtuigen. Maar wat zijn ze waard? En welke invloed heeft de overmaat aan suiker en calorieën, ongezonde vetten, zout en additieven?

Een intern rapport van een voedselgigant zelf is ontluisterend voor de gezondheidswaarde van hun producten. De voedingswetenschap is zelf ook schuldig door ‘voedsel’ te reduceren tot de som van macro- en (soms) micronutriënten. Terwijl echt, natuurlijk voedsel heel wat meer is: de ‘holistische’ eigenschappen omvatten de vele fytonutriënten en oplosbare vezels, een goede volume/calorieën verhouding en natrium-kaliumbalans, en vele andere…

En uit tal van studies blijkt overduidelijk dat het percentage aan ‘ultrabewerkte’ producten in de voeding sterk gelinkt is aan obesitas en een hoger ziekterisico: diabetes, kanker, cardiovasculaire en cerebrovasculaire ziekten (verstoring doorbloeding van de hersenen) …
De onderzoekers pleiten dan ook voor beperking van de consumptie van bewerkte producten, ten voordele van niet, of weinig bewerkte voeding.
